Product Description

A high intensity Brett culture that defines the "Brett character": Horsey, smoky and spicy flavors. As the name suggests, this strain is found most often in Lambic style beers, which are spontaneously fermented. It is also found in Flanders and sour brown style beers.

Attenuation: 70-85%
Flocculation: Low
Optimum Fermentation Temperature: 85°+
Alcohol Tolerance: Medium-High

Note: White Labs yeast must be kept cold to ensure freshness. They are shipped with ice packs, but need to be refrigerated upon receipt. Remove them from cold storage a few hours before use.
